Lentil and sweet potato Daal (vegan)
Ingredients
- 200 g green lentils
- 1 chopped onion
- 2 cloves of garlic, chopped
- 1 carrot
- 1 sweet potato
- 300 g chopped tomatoes
- 25 cl coconut milk
- 1 tsp. cumin
- 1 tsp. turmeric
- 1 tsp. curry powder
- 1 tsp. mild chilli powder
- 1 tsp. olive oil
- 2 tbsp. chopped parsley
- Salt
Recipe
1 Cook the lentils in 4 times their volume of water for 15 minutes.
2 Peel then cut the carrot and sweet potato into cubes.
3 Place the frying pan over medium-high heat and do the water drop test.
4 Add the oil with the onions and garlic and sweat for 2 minutes.
5 Add the cut vegetables along with the chopped tomatoes and continue to sauté. Lower the heat if necessary.
6 After 5 minutes of cooking, add the spices and the coconut milk.
7 Add the lentils to the mix and continue to cook over low heat for 6 to 8 minutes.
8 Adjust the seasoning and sprinkle with parsley.
Tip: For a full meal, serve your Daal with Basmati rice.
