One pot Indian pasta
Ingredients
400 g riso pasta
150 g cauliflower in florets
1 zucchini
2 crushed tomatoes
1 small sweet potato
1 chopped onion
20 cl coconut milk
60 cl of water
1 tbsp curry
1 tbsp turmeric
1 tablespoons chopped cilantro
Recipe
1 Peel the sweet potato and cut into small cubes and the zucchini.
2 Cut the cauliflower florets into slices.
3 Put the riso pasta, sweet potato, zucchini, cauliflower, onion, tomatoes, spices and water in the pan.
4 Cover and bring to a boil, then remove the lid.
5 Lower the heat and cook for about 15 minutes, stirring regularly.
6 When the water runs out, add the coconut milk and continue cooking.
7 Once cooked, add the cilantro and season if necessary.
Tip: You can make the dish with pasta such as penne.
