GRILLED AUBERGINES WITH TOMATOES
Ingredients
- 2 aubergines
- 4 tomatoes
- 160 g cooked chickpeas
- 2 cloves of garlic
- 2 tbsp olive oil 1 tsp. cumin
- 1 tsp. coriander
- 1 tsp. mild chilli powder
- ½ tsp. turmeric
- 1 tsp. granulated sugar
- Salt, freshly ground pepper
- Fresh coriander
Recipe
1 Wash and cut the aubergine into two centimetre cubes. Do the same with the tomatoes after removing the seeds. Finely chop the cloves of garlic. Mix the ground spices.
2 Place a frying pan over medium-high heat, do the water drop test. When you reach the right temperature, add the cubed aubergines and leave to brown until they come away from the bottom of the pan. Turn and cook for another two minutes.
3 Add the spice mix then the cubed tomatoes and the granulated sugar. Turn the heat down to medium-low and cook for another five minutes. Add the drained chickpeas, the olive oil and season with salt and pepper.
4 Serve hot and sprinkle with the chopped coriander.
