ONE POT MEXICAN QUINOA

Ingredients

  • ¾ cup quinoa
  • 1 finely chopped onion
  • 1 cup cooked red kidney beans
  • ½ cup cooked corn
  • 8 oz diced tomatoes
  • ¾ cupl vegetable broth
  • 1 avocado
  • juice of 1 lime
  • 1 tsp mild red pepper
  • 2 Tbsp chopped cilantro
  • 1 Tbsp olive oil
  • Salt and pepper

Recipe

1 Heat the pan at ⅔ of the maximum power of the stove, test the heat using the “water drop” technique.

2 Add olive oil and onions, cook for 2 minutes.

3 Add the quinoa to the pan, then add broth, tomatoes, corn, beans and red pepper, cover.

4 Simmer for 20 minutes, stirring regularly.

5 Before serving,  season and add lime juice, cilantro, and diced avocado.

Tip : Keeping this recipe as a basis, you can obtain galettes by adding eggs and bread crumbs to the cold preparation, and cooking in the frying pan.
