Surprise Crepe Dumplings with Diplomat Cream
Ingredients
For the crepes:
- 2 cups flour
- 1/4 cup sugar
- 1 oz butter
- 2 cups of milk
- 3 eggs
- For the Diplomat cream:
- 1 cup milk
- 2 egg yolks
- 1/4 cup sugar
- 8 oz cornstarch
- 1 vanilla bean
- 2 sheets of gelatin
- 1 cup heavy cream
Recipe
For the crepes:
1 Mix together the sugar, flour and eggs in a bowl. Slowly incorporate the milk, then the melted butter.
2 Heat the crepe pan on medium heat and make the crepes. Set aside and allow to cool.
For the Diplomat cream:
3 Soak the gelatin in cold water.
4 Mix together the egg yolks, sugar and cornstarch in a bowl.
5 Heat the milk with the vanilla bean, split in half, then pour it over the egg yolks while whisking.
6 Pour the mixture back into the saucepan, then cook on medium heat while whisking until the cream thickens.
7 Strain the gelatin, then incorporate it into the mixture and allow it to cool in a mixing bowl.
8 Whip the heavy cream and incorporate it into the cooled custard cream.
9 Spoon out some Diplomat cream into the middle of the crepe and close the dumpling with a toothpick.
Tip: You can also add pieces of fresh fruit inside the dumplings.
