Cauliflower and Chorizo Clafoutis
Ingredients
- 14 oz cauliflower, cut into florets
- 5 oz chorizo
- 4 eggs
- 5 fl oz milk
- 1/3 cup flour
- 5 oz grated Emmental cheese
- Salt, nutmeg
Recipe
Preheat the oven to 390°F (200°C).
1 Steam the cauliflower florets for 20 minutes.
2 Mix the eggs, milk and flour in a bowl and season.
3 Slice the chorizo into rounds.
4 Spread the cauliflower into the mini baking dishes, then pour the egg/milk mixture on top.
5 Slide the slices of chorizo between florets, then sprinkle the cheese.
6 Bake for 25 minutes.
Tip: Depending on the season, you can substitute asparagus and peas for the cauliflower
