CELERY VELOUTE WITH CHESTNUTS AND HAZELNUTS
Ingredients
- 1 diced onion
- ½ lb celery root
- ⅓ lb cooked chestnuts
- 2 quarts chicken or vegetable broth
- ⅓ cup chopped hazelnuts
- 1 Tbsp heavy whipping cream
- 1 Tbsp olive oil
- Salt and pepper
Recipe
1 Peel and cut the celery into chunks.
2 Heat the pan on medium heat, add oil and onions.
3 Cook onions for 2 minutes, add the celery chunks and cook for an additional 5 minutes.
4 Add the chestnuts and the broth of your choice, cover and simmer for 15 to 20 minutes.
5 Add the cream, blend and season to taste.
6 Serve topped with chopped hazelnuts.
Tip: For a recipe more “chic”, add truffle oil at the last minute.
